QUICK ZUCCHINI PASTA


 

 
 INGREDIENTS
 
Any Pasta - 250 gm
Butter - 25 gm
Zucchini - 400 gm, unpeeled, sliced thinly
Garlic - 4 cloves, chopped finely
Tomatoes - 3, chopped finely and crushed by hand
Oil - 4 tblsp
Stock Cube - 1
Water from boiled pasta - ½ cup
Any Dried Herbs - 2 tsp or to taste
Salt and Pepper - To taste
Chilli Flakes - To taste
 
 
1. Boil pasta as per instructions on packet. Drain. Add butter to hot pasta. Toss to mix. (Reserve ½ cup water after draining pasta)
2. Heat oil.
3. Add garlic. Saute till soft.
4. Add zucchini and cook till crisp tender.
5. Add tomatoes and cook till soft.
6. Add reserved pasta water and stock cube. Cook till cube dissolves.
7. Add pasta and mix well.
8. Add mixed herbs, salt, pepper and chilli flakes to taste.
9. Serve hot, topped with grated cheese or parmesan cheese.
10. Can also be served cold as a salad.
 
Note: If zucchini is not available, use any other vegetable or combination of vegetables.
