HOW TO MELT CHOCOLATE IN DOUBLE BOILER?


Put chopped chocolate in the double boiler insert and place over the bottom pan with simmering water. In case of home made double boiler, it is best to use a large borosil bowl as an insert (Steel gets heated more quickly). The bottom of the insert should not touch the water. Stir with a wooden spoon and remove from fire when chocolate melts.
 
 
Note: A steel spoon in this case, will cool the chocolate and cause it to become hard again.
