WHAT IS A DOUBLE BOILER?


A double boiler is a kitchen tool. It’s used for applying gentle heat on the stovetop to delicate preparations such as Hollandaise sauce, chocolate or custards such as Crème Anglaise.

A double boiler consists of a flat-bottomed insert that fits into a pan of simmering water. The insert isn't actually submerged in the water underneath; there is a gap between the water level and the bottom of the insert. That way, the item in the double boiler is heated by the steam from the liquid below, not the hot water. This makes the heat more gentle and indirect.

Home made double boilers consist of a large bowl placed on top of a pan with simmering water.







Note: Hollandaise sauce is a creamy sauce of butter, egg yolks, and lemon juice or vinegar, served esp. with fish. Crème Anglaise is a light pouring custard used as a dessert cream or sauce.
