CHILLI PASTE
INGREDIENTS
Dry Red Chillies - 50 gm
Water – ½ cup
Oil – 200 ml (1 cup)
Ginger – ½ tsp chopped finely (minced/ paste)
Garlic - ½ tsp chopped finely (minced/ paste)
Salt – ½ tsp
Ajinomoto – ¼ tsp (optional)
Sugar – ½ tsp
Tomato Ketchup – 1 tblsp
Star Anise - 1

Remove the stem of chillies. Soak dry red chillies in ½ cup water for 20 minutes.

Mince or roughly grind the chillies in a grinder, using
the same water.

Heat oil. Reduce heat. Add ginger and garlic. Cook till ginger-garlic turns light golden.

Add the chilli paste and cook for 2
minutes.
5.
Add salt, ajinomoto, sugar, ketchup and
star anise.
6.
Cook the chilli paste for another 2
minutes.
7.
Remove from fire and allow it to cool. Store in an airtight container in the refrigerator. Use this paste in dips and dishes for flavors.
