Left over boiled rice couldn't look any better! :)
When I have leftover boiled rice from one meal, the other one becomes equally as interesting with this easy mix of ham or mushrooms with soup!
BAKED RICE AND HAM OR MUSHROOM
INGREDIENTS
Cooked Rice - 2 cups (boiled or leftover pilaf)
Ham - 1 cup chopped
OR
Mushrooms - 2 cups diced, sautéed in little butter on high heat till crisp tender
Cream of Mushroom Soup - 1 small packet prepared as per packet instructions (will use onle 1 cup of prepared soup)
a. Egg - 1, beaten
b. Milk - ¼ cup
c. Salt - to taste
d. Pepper - to taste
e. Dried Herbs - ½ tsp
Potato Chips - 1 cup crushed
OR
Bread Crumbs - 1 cup

OR
Bread Crumbs - 1 cup
1. Grease an oven proof glass baking dish with melted butter or oil.
2. Preheat oven to 180°C.
3. Mix rice with ham or mushrooms.
4. Spread on baking dish.
5. Combine 1 cup of prepared soup with a to e ingredients. Pour over rice. Sprinkle chips or bread crumbs on top.
6. Bake for ½ an hour or till set.
