FROM THE KITCHEN: COUSCOUS SALAD - DIETER'S DELIGHT!


It's good news for all those on a diet! This is a healthy fat free salad which doesnt taste like the usual low cal salads one gets so tired of eating..

Fat Free but not boring has always been my motto! If it's boring I wouldn't last more than a meal on a diet!

This is one of those dishes, which even though they are fat free can easily be served to guests at a party! :) Now you know what I mean! :)


COUSCOUS SALAD

 



INGREDIENTS
Couscous - 250 gm
Stock Cube (Chicken or Vegetarian) - 1
Tomatoes - 2 deseeded and very finely chopped
Capsicum - 1 very finely chopped
Paprika - 1 1/2 tsp
Juice of 1 1/2 Lemons
Salt and Pepper to taste
Jalapenos - 3 chopped
 
GARNISH
Green or Black Olives (Pitted) - sliced
 

1. Cook couscous as per instructions on packet. While cooking, add stock cube to water instead of salt.
2. Cool.
3. Add chopped tomatoes and capsicum.
4. Add paprika, lemon juice, salt and pepper. Mix. Check seasoning.
5. Add chopped jalapenos. Mix.
6. Garnish with sliced olives.

Option: At the time of serving, can garnish with chopped spring onion also to add a little crunch.
